Only the world best watercolours use honey, giving the paint a higher level of pigment holding. So as an artist you have the choice of using the paint as traditional watercolour or with the intensity of gouache.
Another benefit of using honey is that you can revisit your watercolours when they dried several months later. Just add water, let the honey absorb it for a few seconds, then you can rework your art.
